This is the blog: http://traditionalcookingschool.com/ They also have a class where there is a monthly membership and a bunch of different classes and you can ask questions join a facebook group. I am taking lacto-fermentation right now. Only been a week or so and I am feeling good, not like I have been feeling. Been struggling for a many years now. So the reason why I am sharing is it just may help you or anyone else that may need it. So anyone feeling sick, or just would like to eat more healthy they have a lot of classes or just use the blog. Hope this can help someone else too.

The site has a ton of info! Thank you. I have been doing the homemade coconut milk kefir and water kefir for almost 4 years then backed down on the coconut milk kefir. The best I felt was when using a half gallon a day of the kefirs. I need to get back to healthier again too. They put thickeners in the coconut milk well over a year ago and it turned into slime vs good kefir.
I am unfamiliar with the food part. I will say since feeding my flock fermented feed they are healthier and look better. Should be a huge clue to self lol
The site you shared has info that's "doable"

Fermenting foods do seem to help me. Now I will be going on the the next class: Cultured Dairy & Basic Cheese eCourse.

Sonshine15, I have been taking the classes cause I know that I need to keep improving in my health. Ordered Einkorn an ancient grain that is suppose to help people with sensitivity to the gluten. It does have gluten but it is not the same as what we are so use to having around. She is really good at explaining why. I have found that the Einkorn does not bother me, but the hard red wheat does. Sourdoughing all the dough is another way of soaking before eating. Remember to soak the nuts, seeds, and grains, so that you can get your vitamins. I am feeling the results of eating this way. I is like I am not being malnutritioned.
